About Us

Celebrating 70 years in 2022, our timeless artisan butchery has always been a family affair. In the 1940s, at the height of WWII, a German butcher named Christian Lorenzen fled his homeland for Ireland. Equipped with little more than his passion for artisan butchery and a bundle of recipes, Christian infused his enthusiasm for the trade into his daily operations and taught his craft to young Joe Walshe. When Christian retired in 1952, his apprentice took over the butchery and continued the classic techniques of his teacher. Upon Joe’s retirement, the business was passed to his son Charles, who now runs the business alongside his son Stuart.

Lorenzen’s is famed for its award-winning puddings, rashers and slightly spiced breakfast sausages – which were once even an annual treat for the Pope, brought from Ireland by one of his closest cardinals. We are also well-recognised for our delicious ready-made meals, our mouth-watering recipes and locally sourced fresh meat, alongside a high-protein range ideally suited to our health-conscious customers.

Meet The Team

Stuart Walshe

Since starting butchery at 17 working under my father Charlie and many other very experienced butchers, I am now the 3rd generation of my family at the helm of the business, after taking over from my father at the age of 25.

I’m very proud to be carrying on the great tradition of the Walshe and Lorenzen name, and I have worked with many fantastic butchers over the years, learning a little off every one and perfecting my craft, including my father, whose drive and attention to detail have definitely rubbed off on me as I always try to better my knowledge and skills.

I bring my enthusiasm into work everyday, always looking forward to seeing our fantastic loyal customers, and making sure they have a unique experience that you wouldn’t find in many other butcher shops.

I always make sure our shop is full of beautiful local produce, with eye-catching meat displays, it’s spotlessly clean, and with sharply dressed friendly staff. I strive for perfection and whilst keeping an eye on the latest trends, I am always looking to improve our products and offerings.

Charlie Walshe

A butcher and master of his craft for over four decades, Charlie has a wealth of butcher experience. From working in Lorenzens the only pork butcher in Navan at the time, to then working in the famous Loughnanes of Galway, when he moved there to start a family. Charlie had a stint there as Head Of Manufacturing, then to return to Meath to reopen the now famous Lorenzens.

Under Charlie’s eye, over the years, the business has gone from strength to strength since selling the famous sausages, puddings and bacon whilst expanding into all meats. Charlie’s dedication has been second to none and with his obsession in perfection he is still as motivated as ever. Charlie’s passion is driven into all staff to produce amazing quality every single time.

Dave

One of our head butchers here at Lorenzens, he is an integral part of the team. A local man, Dave is very popular with the customers. His butchery skills are second to none and he always very professional. Dave has worked his way up through the ranks in some of Meath’s butcher shops on his way to becoming one of the main cogs in the Lorenzens wheel.

Gina

We are delighted to introduce our newest member of staff Gina (from Ukraine). He has a wealth of experience. He actually worked with Charlie 18 years ago when he first came to Ireland, and has now become part of the team here at Lorenzens. His specialities include cutting, boning and he is a true craftsman, bringing something different to the team, and with his impressive knowledge and skills we are really look forward to working with him.

Brian Byrne

I commenced my career in butchery immediately after leaving secondary school.

I started at the bottom and steadily made my way up the ladder to my current position as General Manager at Lorenzen’s.

I have worked in many of Meath’s finest butcher stores and have learned a variety of different techniques along the way that have enabled me to develop specialist skills.

I take great pride in my work and strive to deliver to the very best of my ability which is consistent with the Lorenzen’s approach.

I love to impress our customers with our mouth-watering displays in our butcher store.

I am also incredibly proud to be part of such a talented team, where we work together to create new and exciting recipes that ensure no day is ever the same!

Mihai

Our newest member of staff, Mihai to us is Mr. Perfect, because everything he does is meticulous, and he never does anything without understanding the best way of doing it. Highly skilled from boning to manufacturing, Mihai is a highly valued member of staff and we’re delighted he has joined the Lorenzens team.
